Recipes for Students on the Run



Breakfast Ideas

 Smoothies
1 cup milk
125 grams of strawberries, washed
½ banana
100 grams of yoghurt
Blend or process until smooth
(You can use frozen berries or other fresh fruits such as mango)




Winter meals
Basil and Zucchini soup

Ingredients
2 tablespoons olive oil
1 medium onion, chopped
2 garlic cloves, crushed
6 zucchinis, roughly chopped
3 Cups of Chicken stock or (3 cups water and 2 chicken stock cubes)
1 tablespoon lemon juice
1 cup chopped basil

Method
1. Heat oil in medium to large saucepan and add onion and garlic.
2. Stir over medium heat until onion is soft
3. Add chopped zucchini, Stock or (water, crumbled stock cubes) and lemon juice.
4. Bring to boil and simmer for approximately 20 minutes or until zucchini is soft.
5. Stir in the basil and keep stirring for approximately 5 minutes.
6. Blend or process soup mixture, return to pan and reheat.
